How To Make Corn Fritters

Corn fritters are a great go along with meals or for a light lunch with a salad. Simple easy and quick to make.

You can make your own fritters by using a can of creamstyle sweetcorn for a quick and easy meal. If you grow your own sweetcorn you can make your own creamed corn first and use this in the recipe below.

Creamed Sweetcorn Recipe:
6 medium ears fresh corn
½ cup butter
¼ cup water
1 teaspoon sugar
½ cup cream
2 teaspoon cornstarch
Salt & pepper to taste

Cut corn from cob. Place butter in a pot and melt. Stir in corn, water and sugar. Cover with a lid and bring to the boil. In the meantime, put the cornstarch into the cream stir until smooth. Add the corn and stir until thick over a medium heat. Adding salt & pepper to taste.

1 egg
250ml cream corn
2 cups of self raising flour

Make a well in the centre of the flour and add the beaten egg and the creamed corn.

Mix until the mixture is smooth.

Heat some oil in a skillet and add a tablespoon of the batter. When it sizzles around the outside and starts forming bubbles on the top, flip and cook the other side.

Serve with cinnamon and sugar as a lunch or as a side dish with dinner.
