Chips are generally a bit thicker than fries, so make sure you slice your potatoes thin for the right effect.



Choose 2 long potatoes per person
Peel and rinse.
Slice the potatoes into discs along their length.
Slice each disc into “fingers”
Place all your fries into a bowl of iced water for about 20 minutes.

In the meantime heat your oil in a large pot and prepare your drainage plate.

When the fries come out of the oil you will need to let them drain for a short time before eating. To do this line a colander with waxed paper that you have scrumpled then straightened.

Test that your oil is hot by putting one fry into the oil. If it begins to bubble immediately then it is ready.

Drain all the chips from the water and pat dry. Use a sieved spoon to put them in the oil.

Allow to cook for about 15 – 20 minutes until crispy. Use your slotted spoon to put the fries into the drainage colander.

Serve with ketchup! Yum!
